Two-Zone Grilling: The Method That Separates Backyard Cooks from Pitmasters
Most people set every burner to high, throw meat on the grill, and then either burn the outside before the inside cooks through, or pull it early and eat raw-centered chicken. The fix is not a new thermometer or a fancier grill — it is understanding the two-zone cooking method and setting up your grill's heat zones with intentional precision.
Two-zone grilling means deliberately dividing your cooking surface into a hot direct-heat side and a cooler indirect-heat side. The direct zone handles searing and crust formation. The indirect zone handles cooking the interior to the correct temperature without scorching. The resting zone — which most guides ignore entirely — is where the carryover magic happens. When you master these three phases and understand what temperature each zone needs to be running, your results become repeatable and predictable rather than lucky.
Why Grate Temperature and Lid Temperature Are Not the Same Number
This is the single most misunderstood aspect of gas grilling. The thermometer built into your grill's hood measures air temperature at hood level — which is consistently 25 to 50 degrees Fahrenheit lower than the actual grate surface temperature where your food sits. When your lid gauge reads 450°F, the grate directly over a high burner may be reading 490–510°F. Over the indirect side with no burner below, that same ambient reading corresponds to a grate temp of roughly 400–420°F.
This gap matters enormously when you are targeting zone-specific temperatures. A steak needs 450–550°F at grate level to produce the Maillard reaction — the chemical browning process that creates flavor crust. If you are reading your hood gauge and calling 430°F "hot enough," you may be cooking in what is technically a high direct zone but producing steamed rather than seared protein. Always mentally add 25–50°F to your lid reading when estimating grate temperature on the hot side.
The Sear Zone: Precision in the Hottest Real Estate on Your Grill
The sear zone sits directly above your highest-output burners, typically running 450–550°F at grate level. This is not a "blast everything" zone — it is a precision tool. You want even heat distribution across the grate bars, not hot spots and cold spots. On most gas grills, the center of the cooking grate over a single burner can swing 80–100°F from center to edge. This is why rotating your food 45 degrees halfway through the sear (without flipping) creates better grill marks and more even crust.
For a 1.5-inch ribeye targeting medium doneness (140°F internal), your sear zone protocol should look like this: 90 seconds on the first side with lid open, 90 seconds on the second side with lid open, then immediate move to the indirect zone where the lid closes and the interior temperature climbs the remaining 15–20°F through convection. Do not try to cook the whole steak in the sear zone. That is how you get charred exteriors and raw centers.
Burner Positions for Two-Zone Gas Grilling
On a two-burner gas grill, the setup is binary: one burner on high, one burner completely off. There is no "medium on both burners" approach for two-zone cooking — you need a genuine temperature differential of at least 150–200°F between sides to make the method work. With both burners at medium you have uniform direct heat with no cool refuge for indirect finishing.
On a three-burner grill, the classic setup puts Burner 1 (left) on high for searing, Burner 2 (center) on medium for direct cooking of thinner items like fish and vegetables, and Burner 3 (right) fully off for indirect. This gives you a graduated thermal landscape — sear over B1, cook through on B2, finish or rest on B3. A four-burner grill extends this further: B1 and B2 high for a wider sear zone, B3 on low as a transition zone, and B4 off for pure indirect. The wider hot zone is particularly useful when cooking for a crowd where multiple steaks need simultaneous searing.
Charcoal Kettle Zone Setup: Banking Coals for Maximum Control
Charcoal two-zone grilling is more powerful and less forgiving than gas. The temperature differential between sides is sharper — a fully loaded coal bank can run 600°F-plus on the direct side while the indirect side hovers at 250–300°F. The key is coal density and vent position.
After a full chimney of briquettes reaches ash-over stage (all gray, no black patches — roughly 20–25 minutes), bank all coals to one side of the kettle's coal grate, two or three layers deep. Install the cooking grate and let it heat for 5 minutes before placing food. Vent control determines burn rate and indirect temperature: bottom vent at 50% open provides adequate airflow; top vent positioned over the indirect (cool) side draws heat laterally across the food. Close the top vent to 25% to drop indirect temps for longer cooks like whole spatchcocked chicken or pork butt.
Meat-Specific Zone Strategies
Not every protein follows the same zone sequence. Understanding which zone handles which protein first changes your results dramatically.
Steaks and thick burgers start in the sear zone and finish in the indirect zone. The sear-then-finish method (also called the "reverse-sear" when done in the opposite order) produces more control over the final internal temperature. Reverse-sear — bringing the steak to within 10°F of target in the indirect zone first, then searing last — gives an even edge-to-edge cook with a thinner band of overcooked gray meat.
Bone-in chicken thighs and drumsticks belong entirely on the indirect side for most of their cook time. Chicken fat renders and drips, causing flare-ups in the direct zone that carbonize the exterior while the interior remains dangerously undercooked. Place thighs skin-side up in the indirect zone with lid closed until 155°F internal, then move to the direct zone skin-side down for 3–4 minutes to crisp the skin. The USDA safe internal temperature for poultry is 165°F — there is no safe version of undercooked chicken.
Fish and delicate seafood live almost entirely in the direct medium zone, not the sear zone. Grill grates must be aggressively clean and oiled for fish. The medium-direct zone at 350–400°F produces the char and release you need without turning the fillet to powder before it cooks through. Shrimp cook in under 4 minutes total and need the grate to be hot enough to sear the surface before moisture boils out.
Ribs and brisket spend their entire cook in the indirect zone, often with the indirect temperature dialed down to 225–275°F. On a gas grill, achieving this means running only one outer burner on its lowest setting with the lid fully closed. Charcoal kettle ribs require partially closing both vents and replenishing coals every 60–90 minutes. Internal temperature targets for ribs (195–203°F) measure collagen-to-gelatin conversion, not food safety — the muscle fibers must break down completely for the texture to become tender.
Resting: The Zone Most Home Cooks Skip
Resting meat after grilling is not optional — it is mechanically necessary. During high-heat cooking, muscle fibers contract and force moisture toward the center of the cut. If you slice a steak immediately off the grill, that pressurized moisture runs out onto the cutting board. Give it 5–8 minutes in the warm resting zone (or tented loosely with foil off the grill entirely) and the fibers relax, reabsorbing moisture throughout the cut. A properly rested steak is noticeably juicier than one cut immediately. For larger cuts like whole chicken or pork shoulder, rest times of 15–20 minutes are appropriate.
Carryover cooking also occurs during the rest — internal temperature typically climbs 5–8°F after the meat is removed from heat. Target your pull temperature accordingly: pull a medium steak at 132–135°F and rest it to 140–142°F rather than pulling it at target and serving it overdone.
Reading Your Grill: The Skill That Makes the Calculator Work
Temperature zone planning tools give you the framework, but every grill runs differently. A grill with a tight-sealing lid and intact flame tamers holds indirect heat more consistently than one with a warped lid and clogged ports. Calibrate your own grill by placing an oven thermometer on the grate in each zone and taking readings at 5-minute steady-state intervals. Note how far your hood gauge differs from actual grate temperature. That offset number becomes your personal calibration — and with that knowledge, zone-based grilling becomes genuinely precise rather than approximate.
