The Carryover Cooking Problem (And Why It Changes Everything)
When you pull meat off a heat source, cooking doesn't stop. This is carryover cooking, and it's not a marginal effect — a thick ribeye pulled at 125°F internal can easily reach 133–135°F after a five-minute rest. A bone-in turkey breast can climb eight degrees post-oven.
The practical implication: you should almost always pull meat before it hits your target temperature. How far before depends on the cut. A thin chicken breast needs only a degree or two of buffer. A note on steaks below 145°F: The USDA sets 145°F as the safe minimum for whole muscle beef with a 3-minute rest. Rare and medium-rare fall below this threshold. Why brisket goes to 200°F: This seems counterintuitive — isn't the meat "overcooked" at that temperature? No, because brisket is loaded with collagen-rich connective tissue. Collagen only converts to gelatin around 160–180°F, and the conversion takes time. The USDA revised pork's safe minimum from 160°F to 145°F in 2011, which was a significant update. Poultry is the category where most people overcook with good intentions. Notice that chicken thighs have a higher pull temperature than chicken breasts — that's not a typo.
