The outer layers of your meat are hotter than the center while it's on the grill. Resting Times by Cut: The Real Numbers
General rules like "rest it 5 minutes" are almost useless because a 0.5 lb pork chop and a 14 lb whole turkey have almost nothing in common. Here's what actually makes sense:
Thin cuts (steaks under 1 lb, pork chops, lamb chops): These only need 3–5 minutes. They don't store much heat, so carryover is minimal and they cool down fast. Rest too long and they'll be lukewarm.
Medium cuts (thick steaks, pork tenderloin, chicken breasts, turkey breasts): Plan for 8–15 minutes. There's enough mass here to really benefit from juice redistribution, and the carryover is significant enough to matter for your pull temperature.
Large roasts and whole birds (beef roasts, whole chickens, whole turkeys): These need 20–45 minutes. A whole turkey can rest for 45 minutes and still be hot enough to serve comfortably — the mass retains heat very well.
Low-and-slow giants (brisket, pork shoulder, ribs): These are in a different category. Brisket should rest for at least one hour, ideally two. Pork shoulder benefits from 30–60 minutes minimum. These cuts are cooked to high enough internal temperatures (195–205°F) that the collagen has already broken down into gelatin — the resting period lets that gelatin set up and gives the meat its signature pull-apart texture and moisture.
The Foil Tent Debate
Almost every grilling guide tells you to "tent loosely with foil" while resting. The advice is mostly good, but there's a nuance worth knowing. For large roasts and whole birds, foil helps retain heat and slows the temperature drop, giving you a larger window before the meat cools too much. For cuts with a crispy bark or crackling skin — ribs, smoked pork shoulder, roast chicken — tight foil trapping will steam the crust and make it soggy.
