Weight vs. Volume: Why the Same Cup Measurement Can Contain Wildly Different Amounts
Ask ten home bakers how much flour goes into their chocolate chip cookies, and nine of them will answer in cups. Ask a pastry chef at a serious restaurant, and you will almost certainly get an answer in grams. The reason for this difference is not professional snobbery — it is physics. A cup is a measure of space, not of matter. The amount of actual ingredient you pack into that space depends entirely on how dense that ingredient is and how you fill the cup.
This distinction, which sounds like a minor technicality, is in practice the single biggest source of baking failures in home kitchens. Understanding how weight and volume relate to each other — and when those two measures diverge most dramatically — can transform your results at the stove and in the oven.
The Flour Problem: A Case Study in Measurement Disaster
All-purpose flour is the most instructive ingredient to study first. One US cup of all-purpose flour, measured the way most home recipes intend (spooned into the cup and leveled), weighs about 120 grams. But if you scoop the cup directly into the flour bag and compact it slightly — the way many people naturally do — the same cup holds 150 to 170 grams. That is a difference of 25 to 40 percent.
Run those numbers through a cookie recipe that calls for two and a half cups of flour, and the range between "spooned and leveled" and "scooped and packed" is nearly 125 grams of extra flour. That is essentially a full extra cup's worth hiding in your measurement error. The result is cookies that are dry and cakey instead of chewy, a cake that is dense and crumbly, or bread that will not rise because the dough is stiff.
Bread flour runs slightly heavier at around 127 grams per cup. Cake flour, milled to a much finer particle size, compresses even more easily and comes in at approximately 100 grams per cup — meaning you get roughly 17 percent less mass in the same space compared to all-purpose flour. Substituting these flours by volume without understanding the weight difference is a recipe for inconsistency.
Sugars: Packed, Loose, and Everything in Between
Sugar demonstrates a different face of the weight-versus-volume challenge. Granulated white sugar is relatively uniform and pours consistently, landing at about 200 grams per cup regardless of how you measure it. It is not particularly sensitive to technique, which is one reason sugar-dominant recipes — like simple syrups or meringues — can tolerate volume measurements better than flour-heavy ones.
Brown sugar is a different story entirely. The standard recipe instruction is "packed," which means pressing the brown sugar firmly into the cup. Packed brown sugar weighs roughly 220 grams per cup. Loosely spooned brown sugar in the same cup volume holds only around 145 grams. That is a 52 percent swing depending on how forcefully you press. A recipe that calls for one cup of packed brown sugar is asking for 220 grams; if you interpret it loosely, you deliver only 145 grams and your cookies will spread differently, brown less, and taste noticeably less rich.
Powdered (icing) sugar presents yet another complication. Because it is so finely ground, it compacts under its own weight in the bag and can also contain added cornstarch as an anti-caking agent. Sifted powdered sugar packs in at around 100 to 110 grams per cup. Unsifted, it can range from 120 to 140 grams. Any recipe that specifies "sifted powdered sugar" is encoding a density assumption into the instruction itself.
Fats and Liquids: Where Volume Works Better
Fats and liquids are the categories where volume measurement holds up better, largely because their density is more predictable. Water is the reference standard — 1 milliliter weighs exactly 1 gram by definition. Whole milk comes in at about 244 grams per cup because of its dissolved solids. Heavy cream sits around 232 grams per cup. These are close enough to water that volume measurement introduces only small errors.
Butter is traditionally sold and measured in sticks in the United States, with each stick weighing 113 grams and equaling half a cup or 8 tablespoons. Softened butter measured by the cup runs about 227 grams — exactly two sticks, which is a convenient coincidence. Melted coconut oil and vegetable oil measure similarly at around 218 grams per cup because liquid fats tend to cluster near the same density range.
The outlier among fats is thick, viscous liquids like honey and molasses, which weigh significantly more than water — about 340 grams per cup versus 237 grams for water. This is why you cannot substitute honey for an equal volume of a lighter liquid and expect the same texture. The weight is nearly 44 percent higher per cup, meaning baked goods will be denser and the additional mass will alter how the batter sets up during baking.
Salt: The Most Dangerous Volume Measurement in the Kitchen
No ingredient demonstrates the weight-versus-volume problem more dramatically than salt, and no ingredient has more immediate consequences when you get it wrong. Table salt, with its fine, dense crystals, packs in at roughly 273 grams per cup. Diamond Crystal kosher salt, with its hollow, flaky crystal structure, comes in at only about 135 grams per cup — barely half as much. Morton kosher salt, which has denser crystals than Diamond Crystal, sits around 218 grams per cup.
A recipe developed with kosher salt that calls for "1 tablespoon" is communicating a weight of approximately 8 to 14 grams depending on which brand the writer used. If you measure that tablespoon with table salt, you add nearly 17 grams — over twice as much salt as the Diamond Crystal version. The result will not be subtly over-seasoned; it may be inedible.
Professional recipes increasingly specify salt by weight in grams precisely because of these discrepancies. Home cooks who learn to measure salt by weight unlock a level of repeatability that simply cannot be achieved with spoons.
The Reliability of the Scale
An inexpensive digital kitchen scale removes every variable described above. There is no scooping technique, no packing judgment, no crystal-structure uncertainty. One hundred grams of all-purpose flour is 100 grams of all-purpose flour whether it came from the top of a fresh bag or the compressed bottom. The same applies to every other ingredient.
Converting volume-based recipes to weight is a worthwhile one-time investment. Once you know that your preferred chocolate chip cookie recipe works with exactly 142 grams of flour and 170 grams of brown sugar, you can reproduce it perfectly every single time without rethinking your measurement technique.
